Dian Hong - Yunnan Black Tea

Dian Hong produces a darker brownish brew with a flowery aroma. Dian Hong has a full-body taste that goes very well with milk and sugar. 

When using porcelain Gaiwan or Yixing tea-ware, boiled water at 90-95 Celsius Degreed and infuse it about one minute. It is important not to over brew this teas as they will easily go bitter or exhibit astringency,

Dian Hong is suitable to drink it chilled as iced Lemon Tea or other chilled tea mix.

Hong Kong Style Iced Lemon Tea Recipe

Ingredient:

Black Tea (Recommend Dian Hong Black Tea)

2 scoops Sugar Syrup

2-3 Slices of Fresh Lemon

Ice Cubes

Equipment:

Metal Pot

Cocktail stick or tall spoon

Tall Glass

Preparation Steps

1. Brew the black tea with a metal pot over a burner, make the tea slightly stronger then normal, since the ice will make the tea lighter .

2. filter out the leafs and, let the tea become cold then put it in a fridge

3. prepare a glass with ice cubes, sugar sirap, 2-3 slices of lemon and a cocktail stick.

4. Take out the chilled tea from the fridge then pour into the prepared glass.

5.  In the Hong Kong style cafe the lemon slices are muddle into the tea by the customer. use the cocktail stick (or spoon) and muddle the lemon into the tea until it is sour enough for your preference.

6. Final step, Laid back and enjoy your home make Hong Kong style lemon tea
